Feeling the need for lasagna again? Try making one using low-carb tortillas instead of pasta noodles. Two tortillas per layer, depending on the size of your pan. My 8-serving lasagna only uses 4 tortillas total and we can't tell the difference from noodles.
Other ingredients in the lasagna I've made, just in case you don't have your own favorite recipe to hand --
Sauce Layer: 2 lbs ground beef, a medium onion, 8 oz canned mushrooms, one jar Rao's Marinara sauce (pricey, but some of the lowest carb I've found except for Alessi's brand), italian spices to taste, garlic
Cheese Layers: 6 oz cottage cheese (4%), 10-12 oz ricotta cheese (whole milk variety), parsley flakes, 2-3 cups shredded mozzarella, a sprinkle of parmesan
Not for induction, but not bad overall. :)
